On the farm

I first tasted this salad on my family’s farm when we were blanching and chilling ears of fresh sweet corn for the freezer. Now I think of it anytime I want a quick side dish to accompany a simple grilled meat, chicken tenders or a hearty sandwich. It’s packed with fiber and nutrients, so you’re well on your way to “five a day” from the vegetable and fruit group.
